Meet Carlos: The Story Behind the Restaurant
Jude Momplaisir (Carlos), originally from Jacmel, Haiti, found his way to Dominicus in 2003 when he started working at the Gran Dominicus hotel (now Catalonia Bayahibe La Romana resort). He fell in love with the town’s peaceful charm and welcoming community, deciding to make it his home.
Before opening his restaurant, Carlos worked in the arts and crafts trade. However, when the COVID-19 pandemic struck, he had to reinvent himself. Drawing from his experience in restaurants, he decided to take a chance on his own culinary talents. What started as an experiment soon became a beloved local eatery.
One of his fondest memories is receiving a set of custom-engraved knives from a Cuban friend, Ciro, bearing the name of his restaurant “Grilled Lobster Dinner by Carlos”. Every time Carlos uses the kitchen knives, he is reminded of the friendships and support that helped him build his dream.

Inside Grilled Lobster Dinner by Carlos: Treasures from the Caribbean
Walking into Carlos’ restaurant feels like stepping into a friendly, seaside retreat. The simplicity of the environment allows the real stars—the dishes—to shine. The menu focuses on fresh, locally sourced seafood, prepared with care and authenticity.
The house specialty? Lobster grilled to perfection with a simple yet irresistible touch. Carlos also takes pride in his signature dish, “Sol Dominicus,” a beautifully plated combination of tostones (plantains) and shrimp or “lambi” fish, designed to resemble the radiant Dominicus sun.
For those who love variety, “La Especialidad de Carlos” is a must-try: a feast featuring lobster, fish, octopus, and shrimp with rice with coconut, “tostones”, and fresh salad. Carlos tailors each plate to his guests’ preferences, ensuring a truly personalized dining experience.

The real reward for Carlos? The reactions of his customers. “What I love the most is when a customer finishes their meal and says, ‘Wow! I’ve eaten in many places like Punta Cana, La Romana, and Samaná, but Carlos, you are different.’ That’s what makes me feel good,” he shares. It’s these heartfelt moments that drive his passion and dedication.
Travelers from around the world have become loyal patrons, drawn not only by the flavors but also by the sense of belonging they feel at Carlos’ restaurant making their meals one to remember.

Supporting Local Businesses: Why It Matters
One particularly memorable moment was when a client and friend helped him put his business on Google Maps—an act that helped bring new customers and boost his visibility.
Carlos believes in the importance of supporting small businesses in Dominicus, not just for economic growth but for preserving the culture and local knowledge that make the area special. “We are the ambassadors who provide services, share Dominican culture, and know everything about Dominicus, Bayahibe, and the country as a whole,” he explains. He encourages visitors to explore and support local restaurants, artisans, and businesses that contribute to the authentic Dominican experience.

Challenges, Dreams & The Future
Like many small business owners, Carlos faces challenges. Limited resources make it difficult to enhance the restaurant’s ambiance and hire additional staff. The decline in Russian tourists due to global events has also impacted his customer base.
Despite these hurdles, Carlos dreams of owning his own permanent restaurant space—one that he doesn’t have to relocate. He envisions expanding his business, perhaps opening another location in Punta Cana. His passion drives him forward, and he continues to serve each dish with love and dedication.
