This post is part of our “Faces of Dominicus” series, where we introduce you to the incredible people who pour their passion into making Dominicus such a special place. If you’re looking for a truly unique culinary experience rooted in tradition and served with heart, you absolutely need to discover Il Pomodorino.
Meet Salvatore: The Story Behind the Business
Salvatore’s journey to the shores of Dominicus began far across the Atlantic, in the bustling, flavorful city of Naples, Italy – the very home of pizza. “My name is Salvatore and I am Italian, from Napoli, the city of Vesuvius, of the sea, and… of pizza!” he shares with a proud smile.
After years spent honing his craft in the demanding world of restaurants, Salvatore felt the undeniable pull to create something entirely his own. “I decided to follow my dream and open a place of my own,” he explains. Searching for the perfect spot, he and his wife, Mena, found themselves drawn to the Dominican Republic. “Together with my wife Mena, we found in Dominicus the perfect spot to bring a little piece of our homeland.”
For nearly a year now – “In a few days, we will celebrate one year of activity,” he notes – Il Pomodorino has been their labor of love. It’s been a journey “full of work, challenges, but above all, many satisfactions.” What specifically drew him and Mena to Dominicus? “The beauty of the place, the relaxed atmosphere, the possibility of living near the sea, and the good energy of this area,” Salvatore says. “Here we found the perfect balance between quality of life and business opportunity.”
Inside Il Pomodorino: Treasures from Naples

Stepping into Il Pomodorino is like taking a mini-trip to Southern Italy and bringing the authentic flavor and feeling of Naples to the Caribbean. It’s a place where tradition isn’t just respected; it’s celebrated in every dish.
And what dishes they are! The star of the show, naturally, is the Neapolitan pizza. But Salvatore is quick to highlight a menu rich with authentic treasures. “Neapolitan pizza is undoubtedly the star,” he confirms. Beyond the classic pies, crowd favorites include the deeply traditional La Genovese – a Neapolitan masterpiece of slow-cooked onion and meat ragù. Other popular choices are Manfredi with ricotta, the rich Neapolitan ragù with meatballs, a delightful selection of Italian fritturina (small fried appetizers), pizza fritta (fried pizza – a true Neapolitan street food!), and exquisite seafood pasta dishes like those with crab or lobster.
Why do people flock to these dishes? “I believe people like it because it is authentic cuisine, made with passion and respect for tradition,” Salvatore states. While he focuses on perfecting traditional recipes rather than inventing new ones, he mentions they’ve adapted some dishes to incorporate fresh local ingredients, blending the best of both worlds.
His must-try recommendations for first-time visitors? “I highly recommend Mena’s La Genovese, which is a masterpiece, and our pizza fritta, which is not easy to find outside of Napoli.” He credits Mena with cooking La Genovese with the same passion and fidelity as his mother, making that dish particularly special to him – “For me, that dish is home, history, and love.”
The Magic of Eating Local: Stories That Connect

Eating at Il Pomodorino is more than just having a meal; it’s about experiencing the heart behind the food. Salvatore wants every customer “to feel at home. To have a complete experience, to forget everything for a moment and enjoy with all their senses. To leave with a smile and wanting to return.”
This dedication to authenticity creates truly memorable moments. Salvatore recalls one in particular: “I remember with special affection an Italian couple who, upon trying the ragù, started crying.” Their emotional reaction spoke volumes. “They said they hadn’t eaten it like that since their grandmother passed away.” For Salvatore, this was a powerful affirmation. “Those moments make you understand that cooking goes much more beyond just food.” It’s about connection, memory, and bringing a taste of home across distances.
Challenges, Dreams and the Future
Opening and running an authentic Italian restaurant in the Caribbean isn’t without its hurdles. Salvatore is open about the challenges he faces: “Importing certain ingredients from Italy is not easy, and maintaining a consistently high standard of quality is a constant challenge.” Building a team that shares their vision and passion also “takes time, but is fundamental.”
Despite the obstacles, Salvatore’s dreams for Il Pomodorino are clear and ambitious. “I want to consolidate Il Pomodorino as a reference for Italian cuisine in the area.” Looking ahead, he envisions potential growth: “Maybe in the future open another location, but always maintaining the quality and the soul of the project.” His ultimate goal isn’t just business success, but creating a lasting impact. “My biggest dream is for people to come not only to eat, but to live an experience.”
Salvatore has a heartfelt message for visitors in Dominicus: “I would tell them that behind every dish, every table served, there are people, families, stories. Supporting local businesses is supporting dreams, authenticity, and the growth of the community.” His passion for his work is simple yet profound: “The power to make people happy through food. Cooking is a way to give love, to tell stories, to share culture. Each dish is an expression of my homeland and my heart.”
